Recipe: Cheesy Hashbrown Casserole

As promised, here is the recipe for our Cheesy Hashbrown Casserole! This was one of the first dishes I learned to cook that didn’t require my crock-pot. We were visiting my dad during hubby’s drill weekend and my stepmom made this casserole; hubby really liked it so I asked how to make it and hoped it would be easy enough for me to figure out. I made one little change to the original recipe for hubby and this has become a must have in my house. He is constantly requesting me to make Cheesy Hashbrown Casserole and the great thing is it makes enough to be put with two meals (a huge plus for me when making my menu!)

Super easy to make and is so yummy!

Cheesy Hashbrown Casserole

Prep Time: 15 minutes
*make sure to set out the frozen hash browns so they have time to thawCook Time: 45 minutes to 1 hour
Serves: 3-6

  • 1 Large Package of Frozen Shredded Hashbrowns, thawed
  • 1 Can of Cream of Chicken Soup (or Cream of Mushroom)
  • 1 small container of Ranch Dip* (our store never has the small so I use a little more than half of the large container)
  • 1 16 oz packaged of Shredded Cheddar Cheese (we use the finely shredded)


  • Pre-Heat Oven to 350 degrees,
  • Spread out thawed hashbrowns evenly in 9×13 casserole dish,


  • In a large bowl mix together Cream of Chicken Soup, Ranch Dip and Cheese, Stir Well,
  • Pour over hashbrowns, spread until evenly distributed,
  • Bake at 350 degrees for approximately an hour
Serve with desired main dish and enjoy!
This goes so well with so many different meals, I typically combine it with my Zesty BBQ Chicken but have also paired it with pork chops, grilled chicken, pork roast, even fried chicken. It is without doubt one of my husband’s favorite dishes and he constantly asks (begs) me to make it. Since there are only two of us (it’s off limits to Abby due to food allergies) it goes a long way. There is definitely enough for both of us for two meals plus leftovers for his lunch one day.
**The original recipe from my stepmom uses French Onion Dip, hubby isn’t a fan of French Onion Dip so I substituted Ranch Dip and he loves it this way.
